Valentine Sweets

Sugar Cookies
Makes about 3 doz cookies, depending on size of cutter.

3 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup (two sticks) unsalted butter, room temperature
1 cup granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

In a separate bowl whisk together the flour, salt, and baking soda. Beat the butter and sugar until light and fluffy in a large bowl with an electric hand mixer. Add the eggs and vanilla extract and beat until combined. Slowly add the flour mixture to the eggs and butter and beat until you have a smooth dough. Cover and refrigerate for about one hour or until the dough is firm. Tip- You can make the dough ahead of time and roll the cookies the next day.

Preheat the oven to 350 degrees and line two baking sheets with parchment or silpat. Flour a surface to roll out the dough. Take half the dough out of the refrigerator and roll it out to about 1/4" thick. If you don't have a rolling pin, a floured wine bottle works pretty good. Cut out the cookies with a cutter, I used different sized hearts, if you don't have any cookie cutters a thin drinking glass works to make rounds. Transfer the cookies to the baking sheets. Placing them in the refrigerator for 10- 15 mins before baking them will help the cookies keep there shape. Working in batches keeps the dough easy to work with.

Bake the cookies until they just start to brown, check them at 7mins, they shouldn't bake longer than 10 mins. Let the cookies rest for a few minutes before transferring them onto wire racks to cool. Let them cool completely before icing.

Royal Icing
These cookies get there polished look from royal icing which dries hard and smooth. They are particularly nice for giving because you can stack the finished cookies.

3 ounces pasteurized egg whites (available at most better grocery stores)
1 teaspoon vanilla extract
4 cups confectioners' sugar (powdered)
food coloring, I like gel colors

Icing recipes are not exact, add more or less sugar to get the desired consistency. Almond extract or lemon juice can be used instead of the vanilla to get a different flavor.

In large bowl the egg whites and vanilla and beat with a hand mixer until frothy. Add confectioners' sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. I like to start with a stiffer frosting to pipe the edge for a clean look. This should take approximately 5 to 7 minutes. Add food coloring. If using gel colors use a toothpick to add just a drop at a time until you reach the desired color. These are strong pigments! If you want to have more than one color, divide the icing into several small Tupperware bowls with lids. You'll need to keep the frosting covered until you're ready to ice the cookies so it doesn't harden.

Fill a piping bag with small round tip to make the borders. If you don't have piping bags, a plastic baggie with a tiny cut in the corner works fine. After you're done with the borders squeeze the remaining frosting back into the tupperware. Add water, or lemon juice a little at a time to thin the icing to a looser constancy. Fill the piped border on the cookies with a "flood" of icing for a smooth look. You can use the piping bag again with a larger tip, the icing will spread and smooth itself into the area defined by the piped edge. Let the icing harden before stacking and storing.

A Decadent Delight!

At Art Effect we look forward to the holidays for many reasons, decorating the shop, the festive scent of our seasonal candles, the hustle and bustle... but most of all we look forward to our book-keeper Daphne's amazing homemade toffee! I'm delighted she's agreed to share the recipe with us.

Ingredients

2 sticks butter, plus some for buttering the pan
1 cup granulated sugar
3 tablespoons water
1 teaspoon vanilla
nuts
4 milk chocolate bars, (approx. 43 gram bars)

Before you begin:
Lightly butter a cookie sheet, finely chop or grind 2-3 handfuls of pecans or walnuts, and unwrap and break-up 4 chocolate bars- make sure the chocolate is in very small pieces.

Directions:
In a saucepan combine: 2 sticks of butter directly from the refrigerator, 1 cup of granulated sugar, and 3 tablespoons of water. Melt and stir constantly 10-15 minutes over medium-high heat to a rolling boil. You might want to enlist a friend to help you, as this is hard work! When you reach the carmel color, remove from heat and quickly mix in the vanilla. It will fizzle. Immediately pour the contents from the sauce pan onto the lightly buttered cookie sheet. Tilt the pan from side to side to spread the toffee. The toffee will not cover the entire pan.
*Hint- if you set your cookie sheet on top of the stove while you're making this, it will warm up and the toffee will spread across the pan a little more than if you use a cold cookie sheet.

Quickly sprinkle the chocolate pieces over the toffee and let them melt down for approximately 45 seconds. Lightly spread the melted chocolate around the toffee in a thin layer with a spatula. Sprinkle with the chopped nuts. Place away from heat to set. You can speed this up by placing in the freezer for about 10-15 minutes. If it's cold but not snowing you can place out side to set (if you can trust your squirrels) Break into pieces and store in an airtight container.

Red Velvet Cupcakes

This classic Southern recipe makes 2 dozen cupcakes or 4 dozen mini cupcakes.

Ingredients:

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Preheat the oven to 350 degrees and line muffin pans with cupcake papers.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with an electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, (about 10 minutes for minutes) turning the pans once, half way through. Test the cupcakes, they are done when a toothpick inserted in the center comes out clean. Remove from oven and cool completely before frosting. Be sure to mix the batter before filling the next batch, the oil based batter can separate.

Cream Cheese Frosting:

1/2 pound cream cheese, softened
1 sticks butter, softened
1/2 teaspoon vanilla extract
2 cups sifted confectioners' sugar

This easy frosting is always a hit! In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy. I used a large star tip to pipe the fancy swirls. If you don't have any decorating tips, try snipping a corner off a large zip lock bag and filling with the icing. This will allow you to pipe smooth swirl of frosting.

Butternut Squash Soup

Winter nights have me hankering for warm, filling soups. Try this slightly sweet, creamy Butternut Squash Soup recipe for an easy fix. Serves about 4.

2 tbs butter
1 tbs olive oil
1 medium butternut squash
1 small yellow onion
2 medium carrots, or a handful of baby carrots
2 medium sweet potatoes
a couple of cloves of garlic
32 oz of stock (I used vegetable)
half a cup of lentils
curry powder and spices
half cup cream, optional

Start by chopping all your washed veggies into roughly evenly sized smallish pieces. Heat up the butter and olive oil in a large soup pot. Add the onion and garlic and soften them. Add the vegetables and let everything get a little color. Season to your liking, I added a heavy dash of curry powder, nutmeg, salt, and pepper, stir well.

Add the broth and lentils and bring to a boil. I added the lentils because I had them laying around, and to add some protein to the dish. They can be omitted. Turn down the heat to a simmer, cover and let cook for about 40 minutes, or until the vegetables are tender. Reserve some of the vegetables for color and texture before blending the soup, a stick blender is the easiest and neatest tool for this. Add the cream if desired, and stir the veggies back in, or use them as a garnish in each bowl.

Beet Risotto

Risotto can be intimating to make, but this recipe is easy and won't have you stirring for an hour. Simple to make but fancy enough to serve at holiday meal, with big flavors and impressive color! The goat cheese and mustard greens add a nice tangy edge to the earthy and sweet beet flavor. Season to suit your own taste, try spinach if mustard greens are too strong for you.

This risotto is a great vegetarian entree for four or a side dish for a larger dinner party.

a couple of glugs olive oil
small chopped onion
several cloves of garlic, chopped
1/2 cup dry white wine
1 cup Arborio rice
ginger- I use a couple of big dashes of powered ginger
some fresh, chopped rosemary, or crushed dried rosemary
1/2 cup water
2 cups or 1 can vegetable broth (14 1/2-ounce)
3 small to medium chopped and peeled beets
several turns of the pepper grater
1 tablespoon or so of balsamic vinegar
a bunch of mustard greens
1 (5 1/2-ounce) package chilled soft fresh goat cheese

Heat oil in a Dutch oven over medium-high heat. Add onion and garlic saute until fragrant. Add rice, ginger, and rosemary; saute 1 minute, while stirring. Add wine; cook 3 minutes or until liquid is nearly absorbed, stirring constantly. Add beets, pepper, water, and broth; bring to a boil. Cover, reduce heat, and simmer 15-20 minutes or until beets are tender, stirring occasionally. Stir in mustard greens, torn into small pieces, and vinegar; cook 5 minutes. Sprinkle each serving with the goat cheese. Enjoy!

Autumn Delights

Glazed Apple Pie

frozen 9 inch double pie crust
1/2 cup unsalted butter (one stick)
3 tablespoons all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup water
about 8 firm apples - peeled, cored and sliced
cinnamon to taste
ice cream (optional)

Preheat the oven to 425 degrees. To make the glaze, melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
Fill the bottom crust with apples (dusted with cinnamon) mounding the pie slightly, as the apples will shrink with cooking. I used a mix of jonathan, empire, and cortland apples picked at a local orchard. Using a variety of apples creates a nice complexity of flavor. Cut the second crust into strips and cover the apples with a lattice work of crust.

Slowly pour the thickend sugar and butter liquid over the crust, be careful so that it doesn't run off. Place the pie on a baking sheet and bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 30 to 40 minutes. Cover the top of the pie with foil if it begins to brown to much. Check the texture of the apples with a toothpick, the pie is done when the apples are tender, not mushy.
The kitchen will smell like heaven. After the pie is cooked allow to cool for about two hours and serve with vanilla ice cream. So yummy!

Make a point to get out of the city and enjoy the spectacular fall colors in this brilliant sunshine. All over Illinois and just over the Michigan and Wisconsin border you will find a wonderful selection of apple orchards, cider mills, pumpkin patches and corn mazes. Bring home some autumn delights and share them with friends. I can't think of a nicer way to spend a day.

How to style a scarf

A scarf is an easy way to update your wardrobe, endlessly versatile, it can add color, texture, and softness to any outfit. Here are six ideas for styling one rectangular Epice scarf.

Lattice Style: Double the scarf and wrap around neck with the loop on one side, pull one end from the other side through the loop. Twist the loop once and pull the other end through.
Tie it: Tie it on your handbag, so simple!
Cowgirl Style: Fold the scarf into a square, fold the square in half, tie at the neck. Wear the point to the front, or at an angle, letting the knot sit on one shoulder.
Belt it: Wrap the long scarf around your neck once, artfully drape the ends over your outfit, cinching it at the waist with a belt.
Cowl: Wrap several time around the neck, tucking the ends in toward the back.
Drape it: Open the scarf up and drape it around your shoulders, bring the ends of one side up to the opposite shoulder. Depending on the texture of your top and scarf, it may hold well on it's own, if not secure with a brooch.

Quince Butter Cookies

This is a grown up cookie, not too sweet, with a touch of exotic flavor. I used a Spanish quince paste for the filling, but any nice jam would work well. Quince paste can be found in the cheese section of specialty food stores.

3/4 cup butter, softened
1/2 cup white sugar
2 egg yolks
1 3/4 cups all-purpose flour
1 tsp ground ginger
1 tsp cinnamon
1/2 cup quince paste
powdered sugar for dusting

Preheat the oven to 375 degrees. In a medium bowl, cream together the room temperature butter, white sugar, spice, and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Refrigerate dough for about 15 minutes. Form 1" balls of dough and place on ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with quince paste or jam, using a pastry bag or baggie with a corner cut off makes it easy and neat.

Bake cookies for 7 to 10 minutes in the preheated oven, until just golden brown on the bottom. Remove from cookie sheets to cool on wire racks and dust while warm with powered sugar.

Chocolate Avocado Bombs

I started with a recipe for Chocolate Avocado mousse, but it turned out much richer and denser than a mousse. This is death by chocolate with a twist! Serves about 9.

12 oz. good quality bittersweet chocolate, chopped

2 tsp ground cinnamon

1 tsp chili powder

1 large, ripe Hass avocado, pitted and peeled

3/4 cup light brown sugar

6 egg whites

Melt the chocolate with the cinnamon and chili powder in a double boiler, or in the microwave. Puree the avocado and brown sugar in a food processor until smooth. With the machine running, pour in the chocolate mixture. Using an electric mixer, beat the egg whites until they form soft peaks. Mix the chocolate mixture into the egg whites. I found it impossible to fold the dense chocolate mix into the egg whites and used the mixer to make a smooth fudge like concoction. Pour the mix into 9 small serving bowls and refrigerate for at least 1 hour.

Next time I make this, I'm going to do a half recipe and layer it with more fruit. It was delicious with raspberries, would also be nice with a small scoop of ice cream or whipped cream to lighten the intense chocolate experience.

If you want make a more impressive dessert, pour into pre-made chocolate bowls. I recommend making them the night before. Directions below.

nonstick cooking spray

semisweet chocolate

Blow up the balloons about half way, this will be the mold. Wash and dry the balloon and coat with a little nonstick spray. Cover a baking sheet with wax paper and set aside, make sure you have room in the fridge for it.

Melt the chocolate, I find it easiest to microwave at half power in a glass bowl. Heat in 30 second intervals, stirring with a rubber spatula. Stop before all of the chunks are melted, continue stirring until smooth. I used a 12 oz bag 60% Cacao Bittersweet Chocolate Chips and added a dash of chili powder.

Let the chocolate cool until just warm. This is important! If the chocolate is too warm the balloon will burst, covering you and your kitchen in melted chocolate. Once the chocolate is is cooled, simply put a dab of it on the wax paper to make a base, dip a balloon in, turning to coat. Place on top of the chocolate dab. Quickly repeat to make all your cups, make a few extra as some may break.

Refrigerate the balloons for an hour or so, until dry. Pull them out of the fridge and pop the balloons. I found it was easier to gently pull the balloons off of the chocolate if you let them come up to almost room temperature. Avoid handling them too much. Refrigerate the cups in tupperware until ready to fill.

I had extra melted chocolate, so I also made some decorations. Spoon some of the chocolate into a baggie with one corner sniped off, and pipe on to wax paper, I did little hearts. Try initials for a personal touch, or just a lattice.

Summer in the City

One of my favorite things about Chicago are the free summer concerts in Millennium Park. Pack a picnic, bring a blanket, and enjoy our stunning skyline framed by Frank Gehry's steel trellis on the great lawn.

I'm looking forward to the third of the Downtown Sound: New Music Mondays series, She & Him with Hollows, 6/7, 6:30pm - 9:00pm at the Jay Pritzker Pavilion.

Indie darlings, She & Him, Zooey Deschanel (vocals, piano, banjo) and M. Ward (guitar, production) make music for an eternal springtime, when the temperature is warm enough to go riding with the top (or at least the windows) rolled down and the radio turned up. Local pop punk group the Hallows open.

Easy Crepes

4 eggs
2 cups milk, I used 2 percent
1 1/2 cups flour
2 TBS melted butter
3 TBS sugar
pinch of salt
1 tsp vanilla

Beat the eggs with a mixer until frothy and lightened to a pale yellow, beat in remaining ingredients until smooth. Heat a small skillet, sprayed with pam, over medium high heat. Add just enough batter to coat the bottom of the pan. Let cook until you see bubbles on top and the edges are firm, flip. The first couple of pancakes are always ugly, I nibble on them to make sure the batter has a good flavor.

Fill these thin pancakes with whatever you have around, I used nutella and blackberry jam and they were quite good! Sliced bananas or strawberries would be lovely, or try a simple filling of butter, sugar and a little lemon juice. Sprinkle the top with a little powered sugar and voila! Crepes. Perfect for a no fuss, impromptu brunch.

Banana Bread Recipe for Mom

Just in time to impress Mom for Mother's Day morning. Esthers's easy to make Banana Bread recipe. Scrumptious and oh so delicious!

Esther’s Banana Bread

1 Stick unsalted butter
1 1/3 cups dark brown sugar
3 large eggs beaten
1 tsp. vanilla extract
1 tsp. baking soda
1/4 cup sour cream
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/4 tsp. salt
3 overripe mashed bananas

Pre-heat over to 350. Grease 9x5x3.5” loaf pan. Cream butter and sugar. Add eggs and vanilla and beat until the light. Stir in baking soda and sour cream. Mix together flours and salt. Add to batter and mix. Add bananas and mix well. Pour into loaf pan. Bake about one hour until a tester inserted into the middle comes out clean.
